However, I liked the comment “ a wine for dessert should be sweeter than the dessert…”; a great comparison of the ‘dry’ Champagne and cake… Which of course leads to the question about a Port vs a sweet dessert wine and which with which…
Sipping plonk was so easy… your webinar has opened a can of worms… I think I need your book but could not order on the “re-play”.

Port is a wine that starts sweet (as all wine does) and the fermentation is stopped by adding brandy or grape spirits to the bath to kill the yeast. Therefore, the wine ends up sweet (not all the sugar has been consumed by the yeast) yet high in alcohol due to the spirits/brandy in the liquid.

I love Port with chocolate cake and deserts. Some of the only other wine that is sweet enough to drink with cake is demi-sec or doux sparkling wine.
